Swiss Maid Fudge – An Old-Fashioned, Handmade Candy Shop Turned Virtual Sweets Purveyor

January 29th, 2012

Article by Toan Dinh

Generations of Americans have long had a soft spot for old-fashioned, homemade candy. Many of us fondly remember our local handmade candy shop, recalling favorite flavors of jawbreakers, the dark, black taste of sweet and salty licorice, or the crisp autumn apples covered layers of gooey, creamy, caramel. It’s hard to imagine the candy of today living up to the nostalgic memory of the quaint candies of yesterday. After all, how could store-bought fudge ever match Grandma’s secret recipe for chocolate fudge? How could factory-made caramel apples ever be as good as the ones made fresh at the farm at harvest time? All is not lost, however, as a small contingent of traditional candy makers have stayed true to the confectionary quality and methods of the past.

Swiss Maid Fudge, a handmade candy shop in Wisconsin Dells, Wisconsin, is one such traditionalist. Forty-five years ago, they started making classic, homemade chocolate fudge according to tried-and-true, old-fashioned techniques: boil all-natural candy ingredients in large copper kettles set over an open, gas-fired cast iron stove, and pour the contents out onto cool, solid marble to mix and mold the candy. Very little in that process has changed since they started; the handmade candy shop sticks to the rules and techniques handed down through the family for generations. Only two things have been adjusted in Swiss Maid Fudge’s operation: the expansion of their line of sweet products, and the availability to buy those products online.

Their virtual handmade candy shop now enables customers across the continental United States to get their hands on old favorites such as creamy chocolate fudge, homemade caramel apples, salt water taffy, hand-dipped chocolates, and crunchy brittles and barks. To get the creamy taste and texture that so many of us remember, Swiss Maid Fudge uses only 100% Wisconsin Sweet Cream Butter in their products, adding no preservatives to tarnish the flavor. As well, make all of their candy in small batches, shipping it out as soon as possible so that customers can enjoy the taste of fresh candy.

Old hands at candy-making, Swiss Maid Fudge is particularly proud of the quality and variety of their seasonal treats. Over several decades, this handmade candy shop has developed several creative flavors for the holidays, including peppermint stick chocolate fudge, handmade cranberry walnut fudge, candy cane truffles, gingerbread bark and holiday caramel apples dipped in white chocolate and sparkly, green sugar. These goodies are made available only during the holidays, able to sweeten any festive gathering from September through January.

Family-owned and operated since 1962, Swiss Maid Fudge maintains a loyal following in their local area and beyond. They even offer tours of the handmade candy shop, making sure that everyone gets a taste of homemade candy. Swiss Maid Fudge has received an award for “Best Product” by Orca Communications Unlimited, LLC for the high quality candy products they offer.

Beautiful Melody?”Based on Han Dynasty folk songs in, Xianghe Song, Lapel is a music form developed in the traditions of Pre-Qin Dynasty and Chu music.Lapel was first recorded in Book of Jin-Music.The traditional singer accompanied himself on a drum, while an orchestral instrument was played at the same time, and so it got its name. Lapel came from Book of Odes-Zheng Feng, which describes a young lady revealing her love to her admirer. The graceful and sophisticated background music and Hahui’s singing seem like a boat, we glide through the long river of history, reminiscing about a love of two thousand years ago. The snippets of remembrances in the lyrics express the emotions with references to the collar of traditional clothing, extending the feelings through recollection. This song is in the tradition of the ancient rhymes of the Spring and Autumn periods rendered in the folk music melodies of that time”

But in addition to pancakes are many other traditional Italian desserts that can be played in our house, obviously not wanting to overdo things step by step starting with the simplest recipes, but then move on to more complex ones like Cassata alla siciliana and cannoli. Surely the most important part is that the ingredients, it is crucial that they come from areas where the typical product is sweet, sweet pain of perfection. High Quality, click: fr.youtube.com Here’s a version of this warm song. Thank you Ron (rhopen) for the microphone, you were right about its quality =) Lyrics: GARTAN MOTHER’S LULLABY lyrics by Seosamh MacCathmhaoil (Joseph Campbell) Sleep O babe, for the red bee hums the silent twilight’s fall, Aoibheall from the grey rock comes, to wrap the world in thrall. A leanbhan O, my child, my joy, my love my heart’s desire, The crickets sing you lullaby, beside the dying fire. Dusk is drawn and the Green Man’s thorn is wreathed in rings of fog, Siabhra sails his boat till morn, upon the Starry Bog. A leanbhan O, the paly moon hath brimmed her cusp in dew, And weeps to hear the sad sleep-tune, I sing O love to you. Faintly sweet doth the chapel bell, ring o’er the valley dim, Tearmann’s peasant voices swell, in fragrant evening hymn. A leanbhan O, the low bell rings, my little lamb to rest, And angel- dreams till morning sings, its music in your breast.

Childhood Memories with Old Fashioned Candy

January 18th, 2012

Article by Christopher Pratt

There are many memories of our youthful days; playing in the park past sunset on a long summer day, sleepovers at our friend’s house, or how about the annual spelling bee. And for most of us there are so many more memories of the “good ole days.” Sometimes it is fun to sit back and just think about when life seemed so less hectic and there wasn’t a care in the world. I recently had a chance to reminisce a bit and what brought a smile to my face was thinking about heading down to the little candy store on the corner and picking out my favorites.

Modern day candy just doesn’t feel the same. There is something about old fashioned candy that makes me smile. Today’s candy is no match to the likes of: Teaberry gum, Necco wafers, Boston Baked Beans, root beer barrels, or Abba Zaba. Each one of these yummy candies brings about associations to different childhood memories. Since many of these candies are no longer sold in stores it got me thinking, what are some fun ways to celebrate these retro candy favorites?

One idea that came to mind was to order a bunch of old time candy from the internet and throw a party with a nostalgic theme. One approach could be to send out invitations that have a classic look to them encouraging guests to dress according to the decade they were born in. Then you can surprise them all by setting up appropriate decorations and music, but more importantly, creatively displaying some of the nostalgic candy you ordered. Not only does candy serve as a great decoration, but it is the perfect conversation piece. When guests notice some of the candies they haven’t had in years they will have to get a taste. Everyone is surely to have a story of their favorite childhood candy memory.

The party idea may only work for certain crowds, but sending retro candy as a gift is sure to make anyone happy. Simply go online and find a candy store that sells nostalgic candy in a nicely organized gif box and have it shipped to whomever. This is the perfect way to thank someone in the office, a neighbor, or an old friend you were thinking about. As a business gift someone once gave me an arrangement of a few different old fashioned candies. It was great! I took the candies home and shared them with my family as we told different stories about what each candy reminded us of. What a perfect way to send a unique gift to someone who deserves it.

A friend of mine used old fashioned candy at their kid’s birthday party and it was a hit! It makes sense; we love old time candy not just for the memories but because it tastes good too. Kids these days still get excited over gum cigarettes, circus peanuts, gold mine gum, or even rock candy. You could use nostalgic candy as a thank you gift to the party guests or create a game and hand out the candy as a prize. I have also heard of parents putting their old time favorite candies in their children’s stockings at Christmas. To their surprise, the kids loved it and said something like, “why don’t we have cool candy like this today?”

These are just a few of many ideas to bringing back some old favorite candies. No matter your preference of old fashioned candy there is certainly a fun story to go with it. This is why we all love retro candy so much; it’s fun! More than just eating candy, nostalgic candy provides stories and entertainment with friends, kids, neighbors, or co-workers. Give it a try and expect a real big smile!

Sweet Apple Butts

January 10th, 2012

This is a video on BBQ pork butts done on a traditional pit. Recipe: Inject 17-19 pounds of pork butts w/ 1 TBS concentrated liquid smoke, 2 TBS Creole salt mix, 3 TBS dark brown sugar, 1 can apple juice concentrate and smoke in pit until done (6-8 hrs).

Watch as Swedish band Junip translates the song “Sweet and Bitter” from their full length album release “Fields” beautifully to a bed of bassy synths, soaring leads and modulated guitar. José González is playing his traditional nylon string guitar through the Moogerfooger MF-104Z Analog Delay for the entirety of this “Sweet and Bitter” rendition. Then he kicks in the MF-103 12-Stage Phaser and MF-105M MIDI MuRF to launch a fluttery modulation mimicking the sound of a rotary speaker to punctuate the second half of the song. Tobias Winterkorn began with one hand on the Little Phatty Stage II and the other on the Minimoog Voyager Old School, laying a two-handed call and response bass line. The Voyager Old School then takes the filtered lead in place of the Moog Prodigy that typically takes this part in Junip’s live show. Johan Grettve is using the Minimoog Voyager XL to add a buzzy bass line through a MF-107 FreqBox and tweaks the “Frequency” knob throughout the song, also sprinkling in the MF-104Z Analog Delay throughout. Joel Wästberg plays a Little Phatty Stage II in the instrumental section at the end of the song, repeating the line while tweaking the filter section and the octave buttons. To finish the song, he manipulates the time and feedback knobs on the MF-104Z Analog Delay creating a warbley mass of echoes.
